"Every year I look forward to the asparagus season, the vegetable that heralds the beginning of spring. My favourite is white asparagus, which is the most common in Valais. In order to guarantee their freshness, I buy them directly from local producers and choose asparagus bearing the Valais brand label. The best way to prepare them is to boil them and serve them with a homemade mayonnaise and IGP Valais raw ham. The recipe for asparagus gratin with wild garlic is also one of my favourites.
